Why do wines taste better the longer they age
In our daily lives, ordinary wines can develop attractive aromas after being buried for years. This everyday life is also about chemistry. The main ingredient in wine is ethanol, which is buried and sealed. In a few years, you'll smell the tantalizing aroma of wine. The principle is that wine's main components, ethanol and acetic acid (which are found in small amounts in wine), are esterified to produce ethyl acetate.
The reaction is reversible and slow. The longer the storage time, the more ethyl acetate is produced. The ethyl acetate produced is a sweet and fruity substance. The older the wine, the better.
